Well.... been a while, eh? were you all thinking that I’d forgotton you?
Well, first order of business, this is, in fact, the May pie of the month, but since I was working 24/7 on my cursed dissertation, my talente d and lovely cousin JENNA BEASLEY!! stepped in the be the guest artist this (last) month. Pretty great, eh?
Second - as of yesterday, you all need to call me Dr Zollinger. YEAH, that’s right. Pie Queen, PhD. OK, and finally... here is the great story about this pie. So, first of all “Fluffernutter” is a trademark name owned by ( Durkee-Mower, Inc.) the makers of Marshmallow Fluff, brilliant stuff. THe sandwich (peanut butter and fluff on white bread) is particularly popular in New England. THis here is a delicious pie version of the famous sandwich. Give it a try, you might like it. PLus, check out the Marshmallow fluff recipe book the “yummy book” online (or even better try and find a print copy) it’s chock full of other pie recipes! Fluffernutter Pie
1 envelope unflavored gelatin
1 C cold water
3 TB sugar
1 tsp vanilla extract
1 C peanut butter
1 C Marshmallow Fluff
2 C whipping cream
1 Chocolate Crumb Crust, prepared or homemade
In medium saucepan combine 1/2 cup cold water and gelatin; let stand 1 minute. Cook stirring constantly, until gelatin is
completely dissolved. Remove from heat. Stir in sugar, vanilla and remaining water. Beat in peanut butter and Fluff. Chill
until mixture mounds when dropped from spoon. Fold in whipped cream. Turn into crust; chill until set.
