ARCHIVES: Idaho Spud (c) Bavarian Pie

 

Hello Pie Club. I am always looking for the perfect October pie… I guess
some of you maybe are thinking about pumpkin or squash or apples…
but I'm thinking about CANDY. So, listen, this Halloween why not consider
supporting the small independent confectioners who are still out there struggling
to keep their regional candy bars available to the rest of us sweets fanatics? Do you want
to see these now unusual candy bars disappear? NO? Well DO something about it!
Now that I'm done with the speechmaking, let me confess that I actually have a love-hate
relationship with the venerable Idaho Spud Candy Bar. For those of you who have never tried (or
even heard of) an Idaho Spud, It's a cocoa-flavored
potato shaped marshmallow, covered in chocolate and
coconut… somehow this is supposed to resemble a potato And so anyway, while I secretly don't like the Idaho Spud, to eat,
I LOVE the idea of the Idaho Spuds! I love the package design, I love
the weirdness of them and that they exist, in general.
BUT!!! I kid you not, when I found this recipe I asked
p.o.t.m.c member Jeff “papa” Thompson to send me a box
of spuds because I HAD to try this pie…in the same way I HAD
to try the tic tac pie last year. I just HAD to… BUT, let me tell you friends. This pie is honestly, without any reservations, a seriously delicious pie. So much so that I encourage you to go online [ www.idahospud.com ] and buy yourself a box of Idaho Spud candy bars and make this pie (and then give the rest out to trick-or-treaters). It is good. Really good and really easy:

Idaho Spud Pie:

In a microwave safe bowl melt:
8 Idaho Spuds and
1 1/2 cups of milk.

in chilled bowl whip 1 C of heavy cream until stiff. set some aside for decorating the top.
Fold remaining whipped cream into the slightly cooled mixture. Pour into pie shell and refrigerate.
