ARCHIVES: Next Best Thing to Robert Redford Pie!



Hi, Welcome to all you new pie club members this month! Hey, so I don’t know about you, but I wish I was in Park City Utah right now at the Sundance Film Festival.
Really.
But since I’m stuck working here these next two weeks, while the lucky film elite are lounging around with Bobby Redford watching new independent cinema… I’m going to do the next best thing and make a pie!!
Well… actually… I feel embarrassed sending this recipe out since it’s such a cheap excuse for a pie (what with the boxes of pudding mix and tubs of cool whip and all) but it seemed so appropriate for late January… ?

OK. So this pie is sometimes also called “better than robert redford pie”, not to be confused with “better than sex” or “almost better than sex” cake, which is cake in the first place, and is the name for about 10 different cake recipes in the second place. Finally… this “pie” is often made in a 9x13 pan, but then, in my opinion, it ceases to be pie. This recipe makes two pies.

Crust:
1 C flour, 1 C chopped pecans, ½ C butter, softened.
1st layer:
1 (8-oz) pkg. cream cheese, softened, 1 C powdered sugar, C whipped topping
2nd layer: 1
small pkg instant vanilla pudding, 1 small pkg instant chocolate pudding, 2 C milk
Topping:
1 C whipped topping, ½ C grated chocolate

Preheat oven to 350. Mix crust ingredients, press into two 8-9 inch pie pans. Bake for 20 minutes. Cool thoroughly. Mix the ingredients for the 1st layer, and spoon on top of crust. Mix the ingredients for the 2nd layer, and spoon on top of 1st layer. Top with a thin layer of whipped topping, and garnish with grated chocolate. Chill and cut into slices.
