PIE OF THE MONTH: Water Pie!

Happy New year (and happy PIE day (jan 23rd)!  Hey, well I thought we’d pare it down to the simplest, most basic pie. Here is a depression-era pie from the rural Indiana (that’s right!).   This pie proves how much people love pie.  I mean really… what can you make when you have nothing to eat? What can you make pie out of? Water. Seriously. Here goes… and welcome to season 6 of the pie of the month club!
WATER PIE (aka poor man’s pie)
you need a 9” pie shell
1 c sugar
½ c flour
1 ½ c boiling water (yeah, really)
pinch of salt
2 TB butter or margarine
nutmeg to taste
Mix sugar, flour and salt. Add boiling water slowly, stirring constantly. Pour in the pie shell and dot with butter, sprinkle generously with nutmeg. Bake in   preheated 375 degree oven for about 40 minutes. Cool before serving. (this recipe was from Florence Price, in the" willie wiredhand cookbook"... rock on Florence, where ever you are!)  see you next month sueanne@pieofthemonth.org
