Happy November, Pie Club Members!
So the November pie, as per POTMC tradition is an election special! Yet another pie from one of the former presidents of the United States.
I figure you get your fill of thanksgiving-related pie recipes without my help... But still... why not try something more milquetoast for turkey day this year? That’s right, Calvin Coolidge’s Custard Pie. So just a tiny bit of Coolidge history. A notoriously tight-lipped and conservative president, the more i read about Coolidge, more perfect it seems that his favorite pie was a plain egg custard. Stoic, safe, refined, yet completely unwilling to take risks. What more fitting pie for a man whose legacy is defined by quotes such as “If you don't say anything, you won't be called on to repeat it.” Enjoy!
here’s what you need:
9” unbaked pie shell
2 eggs
¾ cup sugar
1 heaping TB flour
½ tsp salt
3 cups boiling milk
Nutmeg, to taste
Beat eggs. Add sugar, flour and salt, mix well. Stir in hot milk. Pour into pie shell. Sprinkle with nutmeg. Bake @ 400° F for 15 minutes then reduce heat to 325° F, and bake 15 more minutes, or until knife inserted near center comes out clean.
