Happy HOLIDAYS all my dear POTMC members! I hope you are all happy and healthy and the sun is shining (unless you live in a drought state, then I hope it is raining). Hey. Well, here’s a new, pie filled year for us all! Hey, well check it out, this month’s special GUEST ARTIST is the brilliant and talented Kiyoshi Smith, at 5 years old, one of the youngest pie club members. Cool art huh? Yeah that is real sawdust on there… But don't worry, you can eat the “sawdust” in this month’s pie, no problem.
Lost Creek SAWDUST PIE
A recipe from Wakulla Springs State Park, in Florida (I think ).
1 9” pie crust, unbaked.
1 1/2 C. coconut
1 1/2 C. graham cracker crumbs
1 1/2 C. pecans or walnuts, chopped
1 1/2 C. sugar
1 C. egg whites (unbeaten)
Combine coconut, graham crackers, pecans, and sugar. Mix with egg whites. Pour mixture into pie shell. Bake 350 degrees for 30 to 35 minutes. Serve warm with ice cream. Happy New Year! Love y’all, All Y’all. firstname.lastname@example.org. OH!! National PIE day is Jan 23!! Don’t forget!
