PIE OF THE MONTH: Brood X Cicada Pie


Hello Gang… well as usual this is painfully late, but hopefully just in time to use up some of those overabundant, yet delicious BROOD X CICADAS. If you aren't within the range of this, the single largest insect emergence EVER! ANYWHERE! then get on the phone and have your pals in the southeastern part of the USA to mail you a few pounds of these noisy buggers. They freeze well, and will impress any dinner guests! This is an adaptation of a tasty pecan pie recipe passed on by BRANTLEY DAVIS… p.o.t.m.c. member from Baltimore MD

You will need:
9” pie shell, unbaked
1/4 c. butter/margarine
1 c. sugar
3 eggs
1 c. corn syrup
1/4 c. bourbon (you'll need it)
1 c. dry roasted cicadas*

preheat oven to 350°F. beat butter to soften. gradually add sugar then eggs one at a time until well blended. add remaining ingredients. sprinkle cicadas into pie shell. Pour in filling (cicadas will float to top). cook 45 - 50 min.
* Dry roasted cicadas:
females are better if you can get them. Remove wings and legs. Place cicadas on a cookie sheet and place in a 225°F oven for 10 minutes.
