Avocado Pie. It’s the pie of the future. I’m a little scared to try it actually, so I’m leaving it up to you to be the test pilots this time… oh wait… that’s the same postcard as the TANG pie… my fault. Just kiddin’ gang! Hey! Don’t be scared! this is a creamy, dreamy coolio summer pie! Seriously! Try it! Yummy and smoooooth. And so easy. Use really ripe Avocados, for sure.
9” graham cracker crust
Mashed pulp from 2 large avocados
¼ lemon (or lime) juice
1 cup sweetened condensed milk
Mix pulp with juice and condensed milk. Pour into crust, bake at 350° F for 20 minutes. Cool and chill (doesn’t that sound like a description of me?). Serve chilled with some whipped cream!
