
Hey!! It's a special November election pie of the month! Why not, I want to know… Here's one delicious pie favored by everyone's favorite first lady… Pat Nixon!(?)
It's a lovely lime chiffon… try it.
Mrs Nixon's FLorida Lime Pie
1 cup sugar
1 tsp lime zest
¼ tsp salt
4 egg whites, room temp
¼ oz plain gelatin
½ cup water
1 fully baked 9” pie shell
½ cup lime juice
4 egg yolks
whipped cream to top
combine ½ c sugar, salt, gelatin and water in top of double boiler.
Combine lime juice,with egg yolks, then wisk into gelatin mixture.
Cook ~ 7 minutes over hot water or until gelatin dissolves and
mixture thickens. Remove from heat and stir in zest. Place the
pan in a bowl of ice water, stirring as the mixture cools.
In separate bowl, beat egg whites until stiff,
gradually add remaining ½ c sugar, beating
constantly. Fold cooled lime/yolk stuff into the
whites. Turn into the prebaked shell,
and refrigerate until cool (several hours).
Serve with whipped cream.
