ARCHIVES: Orange Pie






Fear not! Although it is crazy-style cold outside, you can pretend you are sunning in the sunshine state in summer with this summery pie…

ORANGE PIE … really, really, really orange pie (Florida style…according to Louis DeGouy anyway.. any Floridians out there who can verify?)

First, you make your favorite crust (from scratch) substituting ice cold orange juice for the liquid, and adding1 tsp. grated orange rind.
Roll out and line a 9” pie pan, weight and bake at 450°F for ~15minutes

make filling -
1 cup sugar
5 TB cornstarch
¼ t salt
1 TB grated orange rind
mix these together.
Stir in:
2 cups orange juice (of course fresh is better).
Cook on top of a double boiler or in microwave on medium-high until thickened, stir frequently. Strain into another bowl and add slowly to:

3 slightly beaten egg yolks, while whisking like mad.

Stick all this in a saucepan and cook on low heat stirring constantly for 2 or 3 minutes.
Stir in:
1 TB butter
2 TB lemon juice
Cool and pour into the baked pie shell.

Make meringue :
3 stiffly beaten egg whites
3 TB white sugar
3 TB brown sugar
1/8 tsp salt
1/8 tsp orange extract
1/8 tsp almond extract

whisk these all on high speed until meringue holds peaks. Spread on top of the filling, make sure meringue covers edge to edge of crust.
Bake 10 min at 325° F.
garnish
: Open the door and press peeled orange sections into the top of the meringue, sprinkle sections with a little sugar and cinnamon, bake 10 more minutes.

Whew. really. but enjoy. sunshine in a pie.
