Velvet Pie
This is a great old custard pie recipe. Give it a whirl.

You need:
9" unbaked pie crust
2 1/2 C whole milk
4 eggs
3/4 C sugar
1 1/4 tsp salt
grated nutmeg to taste

Preheat oven to 350 degrees F. In a small saucepan scald the milk over high heat, then set aside. In large bowl beat eggs, sugar, vanillaa and salt. Add 1 C hot milk slowly to egg mixture, beating. Add rest of milk and continue to beat slowly. Pour custard into pie shell. Sprinkle with nutmeg. Bake on lowest oven shelf 40 minutes or until pale gold. Cool completely before cutting.
