SNOW PIE

Hey! Happy July. It's hot. really really hot and that makes me wish for snow...
and who does snow better than Ezra Jack Keats! If you don't know his classic children's book "A Snowy Day" get yourself down to the library and check it out.. it's beautiful.

This pie is a light cool chiffon pie like a mountain of white snow. Refreshing!

Dissolve 1 TB plain gelatin in 1/4 cool water.
Sprinkle 1/4 t. salt over 3 egg whites, beaten until stiff.
Mix in gelatin mixture, slowly.
Fold in 2 C. whipped cream,
1/2 t. vanilla
1/4 t. almond extract

Mound into 9” graham cracker crust.
Chill until firm... Some people serve this with a raspberry sauce, but i think it's a little gory looking on all that white snowy mountain of fluff.
