Marlborough Pie

1 crust for a 9" pie, unbaked (also good with puff pastry!)
1/2 c. applesauce (or - 1 large apple, shredded)
1/2 c. sugar
2/3 c. light cream
grated rind of one lemon & juice of one lemon
1/4 c. sherry (optional)
3 eggs, beaten

preheat oven to 400 F
combine applesauce (or apples) with sugar, cream, lemon zest and juice (and sherry). Stir in eggs.
pour mixture into chilled pie shell
bake at 400 F for 10 minutes, then reduce heat to 325 F and bake 45 minutes more.
Filling won't be firm until pie cools... so don't panic.
