Collage Pie (this recipe makes 2 (TWO) 9" pies

2 crusts for 9" pies, unbaked

Syrup:
1 egg
1 c. brown sugar
1 TB flour
1/4 tsp. salt
1 tsp vanilla extract
1/2 c. molasses
2 c. water

Batter:
1/2 c. buttermilk
1/2 tsp baking soda
1/4 c. shortning or butter
1 c. sugar
1 egg
2 tsp vanilla extract
1 tsp cinnamon
1 c. flour

preheat oven to 350 F
Make syrup: beat egg until frothy. in separate bowl, mix brown sugar, flour and salt. blend into eggs. Add vanilla, molassesand water. set aside.
Make batter: mix buttermilk and baking soda in a cup. In separate bowl, beat shortning, sugar, egg, vanilla, cinnamon and salt. Add half the flour, mix. Add all the buttermilk stuff, mix. Add rest of flour, mix.

assemble pies: pour half the syrup into each shell. pour half the batter over each pie in a spiral, or polka-dots or however you want. bake 40 minutes. cool completely before cutting.
delicious with whipped cream or ice cream!
