Dried Apple Pie (a la Clyde Norman)
2 cups dried sour apples
1 1/2 C water
3/4 C sugar
1 tsp cinnamon
pastry for a 2 crust pie
Soak apples overnight in water. In the same water, cook apples in a saucepan until soft. Mash or press apples through a colander. Add cinnamon and sugar.
Spoon into pastry shell. Cover with remaining pastry and vent.
Bake 10 minutes at 425 degrees, then reduce heat to 350 and bake 30 more minutes.
