Eel Pie (complete with historical notes) by guest artist, the divine ASHLEY RUPP and her students in the Grasslake elementary 4-6 grade intermediate behavior improvement class from Seattle, WA.
Did you know Eel pie was the first Thanksgiving Pie ever!?
Here is our rendition...
Mix 1 envelope of gelatin with 3/4 C brown sugar.
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cinnamon
Stir in 1/2 C milk
1/4 C water
3 egg yolks
1/2 C pumpkin
Mix well. Cook over medium heat, stirring constantly until gelatin and sugar are dissolved. Remove from heat and chill until it mounds.
That's the pie part, now for the meringue:
Beat the whites of 3 eggs until stiff. Add 1/4 C sugar and as many gummy worms as you see fit... the more the better!
Fold this into the pie mix.
Now put the whole mixture into a 9" pie shell and there you have it! Almost eel pie, plus you don't even have to bake it. I made this pie with my class and they told me it "rocked". Need I say more?
