Beer Cheese Cake Pie (Taken from Esquire Cookbook 1955)

1. Hi. My name is Carter—I’m a friend of Sue Anne’s, the coolest girl around. I’m super glad to be asked to participate in the pie of the month club. I’m not much of a beer drinker but for those of you who like a sip now and then, here’s one for you. You could also make it for your boyfriend or girlfriend. Surprise them with a cheesecake today! Here’s the recipe.

2. Pie dough: (see instructions on any prepared-mix package.)
Use the dough to line an 8X3” pan. For the filling, rub 1 1/2 pounds of dry cheese through a sieve. Add to the cheese 4 eggs, 4 oz of sugar, and 3 oz of melted butter. Mix well. In another bowl mix 2 oz of sifted flour with 4 oz of seedless raisins; add 2/3 c. of beer and mix well. Stir this mixture into the cheese mixture. Spread this batter evenly into the pie crust and bake in a medium hot oven for 1 1/2 hours. Have fun with your new cheese cake. Enjoy with a frosty glass of milk. yum.
