Bean Pie
9” Pie shell, baked empty for 10 minutes and cooled.

2-15 oz cans Great Northern beans, drained
3 eggs slightly beaten
1 1/4 c. sugar
1/4 c. melted unsalted butter
1 t. vanilla extract
1 t. ground cinnamon
1 t. freshly grated nutmeg
1/2 t. freshly ground allspice
1 t. Baking powder
1/3 c. evaporated milk (if desired substitute soy milk).

Have pie crust ready. Preheat oven to 350. In a bowl, beat beans until smooth. Beat in eggs, sugar, butter, vanilla, cinnamon, nutmeg, and allspice. In separate bowl, combine baking powder and milk. Add to bean mixture—beat well—pour into pie shell. Bake 50 minutes or until FIRM.
Cool before serving. Enjoy!
