Pie #2 October - Happy Halloween!
Sue Anne says: "use up those green tomatoes in your garden before the frost!"

Green Tomato Pie
Preheat oven to 425 F.
Roll out a 14" circle of pie crust, drape into 9” pie pan

6 medium green tomatoes
3/4 c. golden raisins
1 1/2 t. grated lemon rind
2 Tbs. lemon juice
1 Tbs. cider vinegar
1 1/2 c. sugar
4 Tbs. Flour
1/4 t. salt
1/4 t. cinnamon
1/4 t. ginger
2 Tbs. cold butter, cut into small pieces
confectioner's sugar

Wash tomatoes and cut into 1/8" thick slices; discard stem ends. Put tomatoes in large bowl with raisins, lemon rind, and juice and vinegar: stir and set aside.
Combine sugar, flour, salt, and spices in small bowl. Sprinkle 2 Tbs. of mixture over bottom of crust and toss the rest with tomatoes. Turn mixture into crust and dot with butter. Fold hanging edges of pastry up over filling. Bake for 15 minutes. Reduce heat to 325 F. Bake 50 more minutes. or until bubbling in middle and crust is golden. Cool completely. Dust top of pie with confectioners sugar.
