ARCHIVES: 3 Guy's Pies

These are 3 different pies that, for some reason, are named after various men. Bob Andy is an Amish pie and as far as I can tell, no one seems to know who he is (or was). The notable similarity between these pies is the lack of any interesting ingredients - hmm, i guess that does make some sense!
*They call these "staple" pies - since they can be made exclusively out of kitchen staples. (for you pie history buffs)

1. John Tyler Pie (he was a US president, from Virginia, for you history buffs)

8" unbaked pie shell
preheat the oven to 350° F

2 eggs
3/4 C sugar
1 TB flour
1/2 tsp salt
1/2 C melted... but not quite liquid.. butter
1 tsp vanilla
1 tsp lemon juice
1 C room temp milk
(1/2 C coconut, optional)

Beat eggs. Add sugar, mixed with flour and salt. Mix well and add butter, lemon juice and vanilla. Stir thoroughly & pour in the milk. Mix well. (you can add the coconut now, if you want)
Bake 30-35 minutes.

2. Jefferson Davis Pie (1st and only president of the Confederacy)

9" unbaked pie crust
2 C packed dark brown sugar
1 TB flour
1/2 tsp nutmeg
1 C heavy cream
4 eggs, beaten
1 tsp lemon juice
1/2 tsp lemon zest (peel)
1/2 C melted butter

sift together sugar, flour, nutmeg. Add cream. Mix well. Add eggs, mix well.
Pour into shell and bake 45 minutes or until knife inserted near the center comes out clean.

3. Bob Andy Pie (Who knows?)

8" unbaked shell
preheat oven to 400° F
2 tb flour
1/2 tsp cinnamon
pinch salt
2/3 C sugar
2 eggs, beaten lightly
2 tsp melted butter
1 C scalded milk

combine dry ingredients, add eggs, butter. Add milk gradually, stirring after each addition.
Pour into shell. Bake at 400° F for 10 minutes, then reduce heat to 350 ° F and bake 25-30 minutes more.
